Backstory

The cook, a grizzled ex-convict named Bones, threw him a sack of flour and barked orders while the vessel lurched through violent storms, teaching Etienne that baking at sea meant wrestling dough that fought back with every wave. Three years of dodging creditors across Mediterranean ports led him to Marcel's underground bakery in Marseille's smuggler district, where the master pastry chef traded lessons for silence about the "special ingredients" that disappeared into certain politician's wedding cakes. Now Etienne's tattoos tell stories of near-drownings and knife fights, but his croissants still carry the rhythm of those chaotic galley days when every loaf was a small miracle stolen from the chaos.
